Tonight, I made Soft Tacos with Tilapia and Chili-Lime Mayonnaise on page 209. Really good! I did have to substitute for the fat free mayonnaise in the recipe, and used about half non-fat greek yogurt and half olive oil mayo. Family enjoyed it!

3 Days Away
I was away at my mom's house for 3 days this week. I managed to eat well and count my points (and stay within my limit)! Quite an accomplishment! Back to cooking through the book tomorrow!

Double Grain Blueberry Scones--Page 363
I hope my family knows I love them. . .I got up extra early to try out the recipe for these double grain blueberry scones on page 363. As I now know after making these, a scone is really just a big biscuit that you cut into triangles :-) These have whole wheat flour, oats, and ground flaxseed in them, so you know they are good for you! I'm thinking the next time I make them, I will have all the dry ingredients measured out, so all I will have to do in the morning is add the wet ingredients. That would be a timesaver!

Scalloped Potatoes with Cheese -- Page 259
Delicious! Imagine being able to eat this and still lose weight! The recipe was easy to follow, but the cooking time listed is a little too long. I cooked it covered for 45 minutes, then uncovered for 20 minutes at 375 degrees. I used Yukon Gold potatoes and did not peel them as suggested in the recipe. That's just too much trouble in my opinion! Family deemed it a success!

Kielbasa and Bean Soup --- Page 314
Today, before church, I gathered the ingredients for the Kielbasa and Bean Soup on page 314, and tossed them into the crockpot (my appliance of choice on Sundays). The result was a wonderful bowl of goodness when we walked in the door hungry for lunch! I had a toasted English muffin with mine, my husband chose Tostitos to accompany his, as well as a few splashes of Frank's Red Hot Sauce.

Well, it's a new year. The day after Christmas, I started Weight Watchers Online. I have since discovered some of the Weight Watchers cookbooks. As a way to keep myself accountable, I've decided to try cooking through my new purchase. . .The Weight Watchers New Complete Cookbook, which has been updated for the new Points Plus system. Sort of like Julie and Julia, but without all the BUTTER!
